I have been wanting to share this recipe for a little while anyway, and Joan.of.the.arch just asked me for it so I thought I better post it!
Sweet Potato & Pea Patty:
1 Large Sweet Potato, peeled & cubed
Handful Sesame Seeds
1 cup peas (i used frozen)
1 tin cannelini beans, drained
salt & pepper
cumin powder
In a large saucepan, boil the sweet potato until soft. Meanwhile, mash the cannelini beans with a fork until the form a thick paste (you could use a food processor but i don't have one!). Drain the sweet potato, allow to cool for a while, and put in a large bowl. Combine all ingredients and form into patties.
I individually wrapped each one and froze them. Before cooking, it helps to coat them in rice flour if you are pan frying. I use a small skillet and a touch of olive oil.
I think at the time I made them I didn't have any eggs in the house. They can be a little soft so you just haev to be careful when flipping them, when cooking. You can add an egg if you want to, but really I don't think it needs it.
Serve on a bun with salad and plain yoghurt & sweet chilli sauce.

joan: they are just fresh sesame seeds. they just add a different texture.
oh and you can use other vegetables too, sorry i forgot to mention that. you could use normal potato, pumpkin, even grate some zucchini into it or something.
