risotto...?

Just wondering what your favourite risotto additives are?

I love risotto, and I'm always looking for new combinations. Sometimes I chuck a whole heap of veges in, sometimes only a couple, depends on my mood, or what we have Big Grin

So I am interested in what your go-to recipe is, just for ideas. Obviously I am mostly looking for vegetarian recipes, but any is fine!

Mine? Lately I've been loving:

Roast Pumpkin
Fresh English Spinach
Toasted Pinenuts
& crumbled feta.

deeeeelicious....

    Do you ever roast vegetables like zucchini, yellow squash, carrots, and onions? I haven't tried them in risotto, but I have tried them in various casseroles -- I roast a big pan and then split them between a couple of casseroles like a pasta one or even a stew. The roasting gives them extra flavor.

    Thanks for the idea of adding to risotto. I'll have to try it!

    Butternut squash is our favorite. We add pancetta, but made it without for DH's vegetarian sister and it was still as delicious. You do eat parmesan cheese don't you. Must have good fresh grated parmesan cheese.

    My favorite comes from a nearby restaurant. It's got Thai red curry paste, coconut milk, mock duck, diced cooked potatoes, fresh cilantro (coriander), peas, shiitake mushrooms, onions and toasted sesame seeds.
